A soba restaurant based on the concept of enjoying the "fragrance" of the ingredients, as it is produced by the soup stock sommelier. The noodles are 8 parts soba (buckwheat) flour to 2 parts white udon flour, and they use kitawase soba grown in Rankoshicho. Sobana aims to be "unique throughout Japan", and even people who are picky about their soba will be satisfied by the good balance it strikes between using unusual ingredients like smoked duck and beef tendon and not detracting from the flavor and fragrance of the noodles that are the star of the dish.
